USA FINALS APPLICATION


CALLING ALL CHEFS AND SOMMELIERS—
Let’s see what you can do with Sherry! Put your skills to the test for a chance to compete in the Copa Jerez USA Finals in New York City on Monday, November 4. The winning chef and sommelier team will receive a trip to Jerez, Spain to represent the United States in the 2025 Copa Jerez International Finals.

HOW TO ENTER

Complete the application form below to submit a three-course menu (starter, main dish, and dessert) expertly paired with Sherry. Your application must include full dish titles (one of which must include Sherry as an ingredient), the selected Sherry pairing for each course, as well as brief justifications for the Sherry pairings. All applications must be submitted by Tuesday, September 10.

RULES & GUIDELINES

Your team must consist of a working chef and a sommelier from the same restaurant which features Sherry or Manzanilla wine in its beverage program.

Your three-course menu should consist of an appetizer, main dish, and dessert. One of the dishes must include Sherry as an ingredient.

Each course should be expertly paired with Sherry and include a pairing justification.

You can choose wines from any producers that are registered with the Regulatory Council of Jerez and Manazanilla de Sanlúcar de Barrameda.

The proposed pairing menu may not include more than two wines from the same producer/winery.

The food & beverage per person cost of the full menu, including one glass of each selected wine, must not exceed $76 per person.

The winning team will have to prepare the same three-course menu in under three hours during the live Copa Jerez International Finals in Spain.

All applications received will be judged based on the originality and creativity of the dishes and the suitability and justification of the wine pairings.

WHAT IS COPA JEREZ?

Copa Jerez is a bi-annual international culinary competition organized by Fedejerez and the Regulatory Council of the "Jerez-Xérès-Sherry" and "Manzanilla-Sanlúcar de Sanlúcar" DO’s encouraging chef and sommelier teams to explore Sherry’s versatility and food pairing potential. Each participating team presents a three-course menu perfectly matched with a range of Sherry wines.

Eight countries take part in the bi-annual competition where chef-sommelier teams from Belgium, Denmark, Germany, Mexico, Spain, the Netherlands, United Kingdom, and United States compete for the international title in Jerez, Spain. Each country runs their own national finals to find the top team and best pairings. Finalist teams from each country are invited to Jerez to battle it out, live, on stage, at the international competition finals.
