After floating from job to job in New Orleans, Amanda Perdomo was ready to find more direction in her career. In 2016, Perdomo moved to New York City and enrolled in the French Culinary Institute. While in school, she worked on the pastry team at Dominique Ansel, and after graduation, she accepted a position at Del Posto, where her love for cooking professionally was solidified. After some time on the pastry team at Altro Paradiso, and with the outbreak of the COVID-19 pandemic, Perdomo decided to take a break from working service and accepted a research and development position at Fan-Fan Doughnuts.

She quickly missed working in restaurants, and in late 2020, joined the team at Wildair and Contra under Rising Stars alum Fabián von Hauske. There, Perdomo made strong connections with her coworkers, becoming good friends with then executive chef Quang Nguyen. After a year, Perdomo was eager to pursue her own creative visions further, so when Nguyen shared the news that he was opening his own venture, she knew the timing was right and couldn’t wait to join his team.

In 2022, Nguyen opened Cool World in Williamsburg with Perdomo serving as the restaurant's executive pastry chef. At Cool World, Perdomo works to create a welcoming culture for both her team and her customers. Her dishes often play with temperature and texture—and she offers vegan options too—like her passion fruit mango granita with chile syrup and vegan whipped cream. As Perdomo says best, “when people come to Cool World, I want them to feel like someone thought of them.”
