Vishwatej Nath

Executive Chef, Urban Farmer at the Westin Downtown | Cleveland

NOVEMBER 2016

Vishwatej Nath grew up surrounded by food. His father owned a catering business, his brother is a notable executive chef in India, and his grandmother had cooked for him as a child. As a budding chef himself, Nath won a local pastry competition in his hometown of Hyderabad, India. To formalize his training and open a path to working in the United States, Nath earned a hotel management degree from Institut Hotelier César Ritz in Le Bouveret, Switzerland, and then completed his culinary training in Geneva, Switzerland.

Fulfilling his dream to come to America, Nath worked his way around the country, honing his skills as executive sous chef and banquet chef at the Vail Marriott Mountain Resort and as sous chef at The Boca Bay Pass Club in Boca Bay, Florida. He worked in the pastry and baking realm at Mandalay Bay in Las Vegas before taking on the role of executive chef of Vail Resorts Management Company. At the height of his leadership, Nath was responsible for four resorts in Grand Teton National Park, producing 12,000 meals a day and managing a brigade of 250.

In October 2015, Nath moved across the country in a U-Haul—and naturally turned it into a culinary adventure—as he began a new chapter with Sage Restaurant Group and Urban Farmer, a seasonal, farm-to-table steakhouse in the Westin Downtown Cleveland.
