Working as a paralegal while homebrewing on the side, Will Jaquiss always felt inspired by his grandparents, who owned small businesses in the hospitality world. So, instead of going to law school, Jaquiss decided to pivot and turn his hobby into a business. His family encouraged him to attend brewing school, and after graduating, Jaquiss went to work at Breakside under renowned brewer Ben Edmunds, where he started as lead brewer, then R&D brewer. Over the next five years, Jaquiss and his brewing skills grew along with the company, and he learned to pay attention to all the intricacies of the brewing process, both big and small.
Wanting to be closer to family, he moved to Austin, and when he discovered an undeveloped four-acre property, Jaquiss knew it was time for him to follow in his family’s footsteps and open up a spot of his own. After building and renovating for two years, Jaquiss officially cut the ribbon on Meanwhile Brewing Co. in 2020. Featuring a wide range of styles, Jaquiss focuses on drinkable, approachable beers. From classic staples, like “Secret Beach,” his West Coast-style IPA that won Best IPA in the Texas Craft Brewers Cup, to more sessionable, lower-ABV beers like his German-style “Meanwhile Pilsner.”
