INGREDIENTS:
Orange Vanilla Syrup:
1 kilograms white sugar
10 grams vnlla Extract Co. All Natural Vnlla Extract + Orange
To Assemble and Serve:
Yield: 1 cocktail
1½ ounces Del Maguey Chichicapa mezcal
½ ounce Aperol
½ ounce lemon juice
½ ounce lime juice
3 drops black pepper tincture
1 egg white
1 ounce heavy cream
2 ounces soda water, plus more to top
Misted vnlla Extract Co. All Natural Vnlla Extract + Orange
Cracked black pepper
METHOD:
For the Orange Vanilla Syrup:
Combine sugar with 1 liter water and whisk until dissolved. Add extract and stir to combine.
To Assemble and Serve:
Combine mezcal, Aperol, lemon, lime, black pepper tincture, egg white, and 1 ounce Orange Vanilla Syrup. Dry shake to incorporate. Add approximately 50 grams of ice and shake until ice is almost melted. Before the ice is completely gone, add cream and shake again to incorporate. Pour cocktail into a Collins glass bottomed with soda water. Allow the cocktail to set up and stiffen for 20 to 30 seconds then gently top with more soda. Garnish with extract mist and black pepper.
