INGREDIENTS

Pineapple–Banana–Infused Cognac:
Yield: 750 milliliters
750 milliliters cognac
Sliced bananas
Diced pineapple

To Assemble and Serve:
Yield: 1 cocktail
1½ ounces Hpnotiq liqueur
¼ ounce lime juice
¼ ounce simple syrup
Soda water
1 sprig mint
Incredible Hulk gummy worm

METHOD

For the Pineapple–Banana–Infused Cognac:
In a sauté pan over medium heat, torch banana slices on both sides until well caramelized. Transfer to a large resealable bag Add desired amount pineapple and cognac. Seal and freeze overnight. The next day, let thaw. Pass through a fine-mesh sieve. Bottle and reserve.

To Assemble and Serve:
In a shaker with ice, combine liqueur, lime juice, simple syrup, and 1½ ounces Pineapple–Banana–Infused Cognac. Shake until chilled. Double strain into a chilled highball glass. Top with soda water. Garnish with mint and gummy worm.
