From casual Chinese at Simone Tong’s Little Tong to home-style Indian at Chintan Pandya’s Adda and Michelin-star Mexican at Matt Conroy’s Oxomoco and T.J. Steele’s Claro, New York’s most exciting chefs are cooking the food of their own heritage or of a cuisine they love, research, and devote their lives to.
