INGREDIENTS
Poolish:
700 grams all-purpose flour
300 grams wheat flour
10 grams yeast
Dough:
Yield: 115 bagels
6 kilograms bread flour
750 grams levain starter
210 grams olive oil
205 grams honey
165 grams kosher salt
45 grams dried yeast
Bagels:
300 grams honey
100 grams baking soda
Everything Bagel:
80 grams minced onion
80 grams minced garlic
80 grams black sesame seeds
80 grams white sesame seeds
16 grams caraway seeds
16 grams poppy seeds
16 grams red quinoa
16 grams black caraway seeds
16 grams flax seeds
16 grams red pepper flakes
To Assemble and Serve:
Yield: 1 sandwich
Cream cheese
Capers
Sliced tomatoes
Sliced red onions
Smoked salmon
METHOD
For the Poolish:
In a nonreactive container, combine all the ingredients and 1 kilogram water. Cover and refrigerate 6 hours.
For the Dough:
In the bowl of a stand mixer fitted with a dough hook attachment, combine all ingredients, 4 kilograms Poolish, and 2 kilograms water. Mix until a stiff dough forms. Transfer to a clean work surface and divide into 100-gram portions. Roll in tight balls. Wrap tightly in plastic wrap and let proof 3 hours at room temperature.
For the Bagels:
Remove plastic wrap from Dough. Punch hole in the center of each Dough ball and stretch to desired shape. Transfer to a parchment-lined sheet tray and proof 1 hour at room temperature. In a large pot over high heat, bring honey, baking soda, and 25 quarts water to a boil. Reduce heat to medium and working batches, boil Dough 20 seconds. Flip and boil additional 10 seconds. Using a spider, transfer to a sheet tray and set aside.
For the Everything Bagels:
Heat a Vulcan combination oven to 450°F on full steam setting. In a mixing bowl, combine all ingredients. Gently dip Bagels into mixture to adhere spice mixture to both sides. Transfer to a parchment-lined sheet tray and bake 8 minutes. Rotate tray and bake additional 6 minutes. Let cool.
To Assemble and Serve:
Slice 1 Everything Bagel in half. Smear cream cheese on both sides. On bottom half, sprinkle capers. Top with desired amount tomatoes, red onions, and smoked salmon. Close sandwich and slice in half to serve.
