Espresso, Banana Milk, Burnt Honey, Five-Spice

INGREDIENTS

Banana Milk:
6 ripe bananas, cut into 2-inch pieces 
2 cups brown sugar
1 bean vanilla
4 sticks cinnamon
3 ounces molasses 
1 gallon whole milk

To Assemble and Serve:
Yield: 1 serving
1 ounce espresso
¼ ounce burnt honey 
Five-spice powder

METHOD

For the Banana Milk:
In a Vitamix Commercial blender, purée bananas, sugar, vanilla, cinnamon, and molasses until smooth. Transfer to an airtight container. Add milk. Cover and refrigerate overnight. The next day, strain, bottle, and reserve,

To Assemble and Serve:
In a serving glass, add espresso, burnt honey, and 8 ounces Banana Milk. Stir, then top with pinch of five-spice powder.
